Housed in the old-worldly State Bank building, it is a surprise and delight to enter the chic dining room of Paladarr. The room is warm with dark chocolate tones and wooden furniture, pendant lighting and leather banquette seating. There is even a fireplace for winter and shady alfresco dining in a serene garden available summer. It is immediately clear that this is not your standard suburban Thai. The menu is concise and thoughtful. Rather than page after page of Thai favourites, much-loved chef Chaloem Chaiseeha focusses on a smart and contemporary offering of Thai food. Pla Goon – prawns fused with chilli, citrus and coriander wrapped in betel leaves – are a sensational way to kick off the dining and the textures and flavours of the deep-fried snapper with green apple and cashew nut salad are memorable. There are vegan and vegetarian options available, banquet menus for celebrataions calling for a big feast and the kitchen is most accommodating when it comes to specific dietary requirements. You can even sign up to learn some of the kitchen’s secrets with the very popular Paladarr cooking classes. Concise and smart like the food menu, the beverage list is a great offering of local favourites and tasty cocktails. A meal at Paladarr makes for a lovely encounter with one of Australia’s favourite international cuisines.
